We at Amalthea Cellars count on our customers' honest
feedback, and wish to know whenever any customer is not 100%
satisfied.
We strive to balance all of our hand crafted wines with traditional methods: First we find the finest fruit available in the southern New Jersey Outer Coastal Plain region AVA. Then we combine these grapes with new barrels for chocolate, coffee, vanilla, cinnamon, and many other rich intense flavors that come from the timeless art of cooperage. Finally after significant aging in barrels the fruit and chary oak mix to create an elixir that is then blended into balance with another great vinifera chosen by the winemaker to compliment the vintage. It is this process that assures a handcrafted vintage year after year.

Cabernet Sauvignon: Amalthea Cellars has been long known for building rich and balanced Cabernets. Restricting the grapes in the field to two tons per acre helps to produce a highly intense juice. This elixir is then added to brand new French oak and aged for up to eighteen months and then blended into balance.

Merlot: Intense, robust character and full flavor has become the
signature in our merlots, and often we hear "I don't care for merlot and
I love yours", which can be explained by the style used by the winemaker.
With his extensive work done in the great regions of St. Emilion, Margaux,
and Bordeaux these styles can been traced in the wines of Louis Caracciolo.

Cabernet Franc: This long time blending grape, of the world's greatest wine regions: St. Emilion, Margaux, and Bordeaux, is quickly rising on the East Coast of the United States. Cabernet Franc is one of the Outer Coastal Plains top products and one of Amalthea Cellars most popular bottles. A Rich and creamy mouth feel lead into bold flavors of current, spiced apple, and cherry brandy.

Chancellor: The oldest vine on the farm, our Chancellor vines were planted in 1976 and the age comes across in this earthy but jammy blend. This wine is the perfect compliment to any old world peasant style meal.

from our dedication to the finest new oak, malolactic fermentation, and
